I was cooking for a group of twenty people, which terrified me, because expectation was high! So I decided to go with a safe Swedish meatball with egg noodle pasta with mushroom-gravy sauce. Everything was homemade! that would never go wrong. But I was wrong, it is a simple dish, but you could screw up in so many places if you're not cautious. Anyhow, everyone seemed to have enjoyed it, at least if they were telling the truth. Below is the recipe as inspired by Laura Vitale's.
Ingredients:
1 lb of Ground Beef
1 lb of Ground Pork1 Egg
2/3 cup of Panko Bread crumbs
1/4 cup of Milk
1 Small Yellow Onion, finely chopped in a food processor
1/4 tsp of Ground Nutmeg
1/4 tsp of Ground Allspice
4 Tbsp of Unsalted Butter
4 Tbsp of Flour
1 Tbsp of Olive Oil
3 cups of Beef Stock
Mushrooms of any choice and amount
1/2 cup of Sour Cream
3 Tbsp of Chopped Parsley
Direction:
1) Butter the pan with 1 tbsp of unsalted butter. Add in chopped onion. Season onion with salt. Cook until translucent. Remove from the heat. Season with all spice and nutmeg.
2) In a separate bowl, mix panko bread crumbs with milk. Mix and set aside.
3) In a mixing bowl, combine thoroughly ground pork, ground beef, egg, sauteed onion and panko bread crumbs and milk, salt and black pepper.
4) Roll mixture into meatballs.
5) On medium high heat, add olive oil on hot pan. Sear the meatballs (half-cook them) on two sides. Set aside.
6) Butter a sauce pan with 3 tbsp of unsalted butter and add flour to make roux. Add beef stock. Mix until no lump is visible. Heat up to a boil. Cook on simmer the meatballs and mushrooms for 10 minutes or until cooked. Make sure that meatballs are soaked in the sauce. Add sour cream. Mix. Add parslely. Mix.
7) Boil egg noodles with salted boiling water. Strain egg noodles and let it sit in ice cold water to avoid sticky noodles. Strain egg noodles. Add drizzles of olive oil to avoid sticky noodles. Mix.
8) To serve, pour meatballs and sauce over egg noodles. Enjoy.
