There was a semester of my college life when I made an oath of being fit and healthy. And so I hit the gym at least twice a week and most importantly, had the most healthy diet throughout the semester. I attempted (so hard) to limit my red meats and start eating fish. I was getting tedious of Tilapia (because that's often what they have in the store. What do you expect in the Midwest?). And so I hit Costco and bought a lot of Salmon. And I mean a lot of salmon. So I had to be creative everyday and create new Salmon dishes. It was the greatest semester of my life. Seriously.

Ingredients:
1) 1 salmon fillet
2) ½ lemon extracted
3) Olive oil
4) Basil
5) Cayenne or paprika
6) Salt and pepper
7) Arugula
8) Sour cream
9) Mint leaves
10) ¼ onion (chopped)
Procedure:
1) RTP salmon
2) bathe with half of prepared lemon extract
3) season with salt, pepper and paprika
4) heat up olive oil on non stick pan
5) Salmon in the pan, skin down.
6) Then 1 minute each side or until crisp brown
7) Set salmon on top of a bed of Arugula
8) Mix sourcream with finely cut mint leaves
9) 1 tbsp of mixture on top of salmon
10) Sprinkle sourcream with basil leaves and paprika
11) Sprinkle arugula and plate with paprika for presentation
